Taco Soup

Ingredients:
1/2 a rotisserie chicken, diced
2 large zucchini's, quartered
1/2 large onion, diced
2 sweet potatoes, diced
1 can corn, undrained
1 can pinto beans, rinsed
2 tbsp garlic, minced
2 cups of salsa
4 cups chicken broth
1 tbsp chili powder
1 tbsp paprika
1 tsp cumin
1 tsp olive oil
Optional Toppings:
Sour cream or greek yogurt
Shredded cheese
Cilantro
Jalapeños
Avocado
Directions:
First prep all your ingredients. Then heat your oil in the pan on medium heat, add onion and garlic for a few minutes before combining the sweet potatoes for an additional 2 minutes of cooking. Pour in the broth, salsa, corn, beans and spices and bring to a boil.
Once boiling, reduce heat to simmer and add zucchini and chicken. Simmer on low for about 30 minutes to have it be fully incorporated.
Serve as is or with your desired toppings!
