Sweet and Spicy Chicken with Cauliflower

Ingredients:
Chicken and Cauliflower:
1 large head of cauliflower, cut into florets
14 oz boneless skinless chicken thighs
Drizzle of olive oil
1/2 tsp Garlic powder
Salt and pepper
Sweet and Spicy Sticky Sauce:
1/8 cup Honey
1 heaping tbsp minced garlic
1/4 cup soy sauce
1 tbsp Sriracha
1 tbsp Hoisin Sauce
1 tsp Cornstarch
Garnish:
1 tbsp Green Onions sliced
1 tbsp Sesame Seeds
Additional Sriracha to taste
Directions:
Preheat oven to 400 degrees F and line a large baking tray with parchment pepper or foil.
Place the cauliflower florets in a single layer onto the prepared baking tray and sprinkle with a little olive oil. On the other half of the tray lay out the chicken thigh flat. Salt and pepper the whole tray evenly and the garlic powder.
Bake for 20-25 minutes, until it starts to brown on the edges. While chicken and cauliflower are cooking, combine all the sauce ingredients into a small saucepan and heat on medium while continually stirring for about 4 minutes, until slightly thickened. Turn off heat and set aside.
Pull out the chicken and cauliflower, cut up the chicken into bite size pieces and toss all together in the sauce.
Top with green onions, sesame seeds and more sriracha!
