Sushi Bowls

Ingredients:

Salad-

1/2 large english cucumber, diced

1/2 bell pepper (any color), diced

1/2 avocado, diced

1 green onion, thinly sliced

1-2 tbsp cilantro, rough chop

1 cup cooked white rice

2 cups lettuce, I used spring mix

8 immitation crab sticks, cut into chunks


Dressing-

1/3 cup greek yogurt

2 tbsp soy sauce

1 tsp sweet soy glaze

1 tbsp lime juice

1/4 tsp mustard powder

1/4 tsp garlic powder

1/2 tsp fresh minced ginger

dash of fish sauce, rice vinegar and sriracha


*additional sriracha - optional if you like it spicier


Directions:

Mix all dressing ingredients until smooth, set aside. Cut all veggies. Separate all salad ingredients into 2 bowls and top with dressing. Enjoy 😉 easy as that!
