I'm back and ready with some new recipes! Hope you enjoy this one as much as I do : )
Ingredients:
2 lbs of ground turkey
2 tablespoons canola oil
1/2 onion, diced
2 teaspoons salt, divided
1 teaspoon freshly ground black pepper
3 cloves garlic, minced
1/2 teaspoon dried thyme
2 tablespoons soy sauce
24 oz chopped or sliced mushrooms
2 tablespoons all-purpose flour
3 cups beef/chicken/veggie broth
1 (16 ounce) package wide egg noodles
1 cup greek yogurt
Directions:
Turn on the Saute function of the instant pot. Add oil and heat for 1 minute, then add in onions and 1/2 tsp of salt stirring for about 3 minutes.
Add ground turkey to the onions and season with 1/2 tsp of salt and pepper. Stir and break apart chunks until desired size and it is cooked through.Next, add garlic and thyme and cook for about 30 seconds. Add in soy sauce.
Stir mushrooms and flour in the pot and evenly distribute. Pour in broth, remaining 1/2 tsp salt and stir. Close and lock lid, select manual and set timer for 10 minutes.
Release pressure carefully using the quick-release method. Open instant pot, add egg in egg noodles. Seal and select manual again for 5 minutes.
Release pressure carefully using the quick-release method. Open up and stir in greek yogurt.
Serve with your favorite vegetables for a delicious meal with plenty of leftovers!
