Bison Hamburger Salad for 2

Ingredients:

12 oz ground bison 90/10

1/2 cup shredded cheddar

2 tsp olive oil

1 tbsp mayo

1 tbsp ketchup (2 packets worth also works)

1 tbsp pickle juice

4 kosher petite pickles, sliced

6 mini sweet peppers

few slices of onion

2 huge handfuls of spring mix salad

salt/peper to taste


Directions:

Heat oil in the pan and add bison, breaking into smaller chunks. Cook for roughly 8 minutes or until cooked through and browned. Salt and pepper to taste. And for a little extra enhancement, a dash of garlic powder.


Mix mayo, ketchup, pickle juice, salt and pepper to taste.


On to plates, evenly arrange spring mix, onion, mini sweet peppers, pickles, cheese, cooked bison and sauce. I also added halved cherry tomatoes to my salad, since Cody doesn't like them.


It really helps satisfy your burger craving without at additional carbs for dinner! I promise this is an amazing salad!!!
